Tangy Parmesan Tilapia & Fresh Pepper Salad
We LOVE seafood around this house. Almost as much as Mexican Food. You’ll see this one on our supper table a couple of times a month. The Pepper Salad even more frequent especially during the summer.
They are both easy to make, light and delicious. Put this in your 30 minute supper file!
- ½ cup grated Parmesan cheese
- 2 Tablespoons mayonnaise (I use Olive Oil Reduced Fat)
- 1 Tablespoons Reduced Fat Butter (Softened)
- 1 Tablespoon Lime Juice
- ⅛ Teaspoon Garlic Powder
- ⅛ Teaspoon Dried Basil
- ⅛ Teaspoon Pepper
- ⅛ Teaspoon Onion Powder
- ¼ Teaspoon Salt
- ⅛ Teaspoon Cajun Seasoning (or anything else with a little kick)
- 4 Tilapia Fillets
- In small bowl, combine first eight ingredients. Stir well and set aside.
- Place fillets in prepared pan and sprinkle with salt and Cajun Seasoning
- Broil fillets 3-4 inches from heat for 3-4 minutes on each side.
- Remove fillets from heat and spread cheese mixture over the top of each fillet.
- Place fillets back under heat and broil 1-2 minutes longer or until topping is golden and fish flakes easily with fork.
